ALMOND BISCOTTI

2 1/4 Cups Flour
2 Teaspoons Baking Powder
1/2 Cup Sugar
5 Tablespoons Unsalted Margarine

2 Eggs
1 1/2 Teaspoon Lemon Zest
1 Teaspoon Vanilla Extract
1 Cup Silvered Almonds, chopped finely

Preheat oven to 350°. Combine the flour and baking powder in a bowl. In another bowl, combine the next 5 ingredients and mix with an electric mixer at medium speed, until creamy. Gradually add the flour mixture. Stir in the almonds. Divide the dough in half. With moist hands make roll into 2 logs. Place on a sheet and bake 18 minutes, or until firm. Transfer to a cutting board, and slice diagonally. Lay the slices back on the sheet and bake until brown about 12 minutes.
