PEACH COBBLER

1/4 Cups Flour
1 Cup Sugar
3/4 Teaspoon Cinnamon, divided
6 Cups Fresh Peaches, sliced and
peeled OR 16 OZ Frozen Sliced Peaches

Cooking Spray
2 Tablespoons Sugar
1 (15 OZ) Package Refrigerated Pie Dough
1 Egg White, beaten

Preheat Oven to 350°. Spoon flour into a cup and level. Combine the flour, sugar and 1/2 teaspoon cinnamon in a bowl. Place the peaches in an 11 x 7" baking dish, coated with cooking spray. Sprinkle with sugar mixture. Let stand 30 minutes. Combine 1/2 teaspoon cinnamon and 2 tablespoons sugar in a small bowl. Unfold 1 sheet pie dough. Reserve the remaining for another use. Brush with egg white. Sprinkle with cinnamon and sugar. Cut into 16 wedges. Place with coated sides up on a baking sheet coated with spray. Bake for 15 minutes. Set aside. Bake the peaches for 30 minutes. Arrange crust over peaches. Serve warm.
