CRAB CAKES

1 Pound Crab Meat, shell
pieces removed
1/2 Cup Saltine Crackers
(about 12), crushed
1/3 Cup Fresh Parsley,
chopped
1/3 Cup Bottled Roasted
Red Peppers, chopped
2 Tablespoons Plain Fat
Free Yogurt

1 Tablespoon Water
1 Tablespoon Fresh Lime Juice
1/4 Teaspoon Hot Sauce
1 Large Egg White, beaten
1 Tablespoon Vegetable Oil,
divided

Combine all ingredients except oil. Divide crab mixture into 6 equal portions. Shape each into a thick patty. Heat 1 ½ teaspoons oil in a non-stick pan. Add 4 patties and cook 4 minutes. Carefully turn over and cook 3 more minutes. Repeat process with remaining oil for the other patties.
