2 Teaspoons Olive Oil

1 Teaspoon Minced Garlic

Heat Oil in Medium Saucepan. Add corn cook 5 minutes. Remove and set aside. Melt butter in pan, add Onions and saute 5 minutes. Stir in Rice, cumin and garlic. Cook 1 Minute. Add the next 4 ingredients and bring to a boil. Cover Reduce heat and simmer for 45 minutes. Remove from heat. Stir in the corn & beans. Cover and let stand for 10 minutes. Add the last 2 ingredients. Stir and serve. |
