SWEET POTATO CASSEROLE

2 Pounds Sweet Potatoes, peeled and chopped
3/4 Cup Sugar
1/4 Cup Evaporated Low fat Milk
3 Tablespoons Butter, melted
1 Teaspoon Vanilla Extract
2 Eggs
Cooking Spray

Topping:
1.5 Ounces Flour (about 1/3 Cup)
2/3 Cup Packed Brown Sugar
2 Tablespoons Melted Butter
1/2 Cup Chopped Pecans

Preheat Oven to 350. Place potatoes in water and boil until done about 20 minutes. Drain and cool Place in a large bowl and add the next 4 ingredients. Beat with a mixer at medium speed until smooth. Add eggs and beat well. Pour into a 9 x 13 pan coated with cooking spray. Topping: mix the first 3 ingredients in a bowl. Sprinkle over the Potatoes. Then sprinkle the pecans evenly over the top. Bake for 25 mintues.
