SWEET POTATO MINESTRONE |
2 Teaspoons Olive Oil

2 Sweet Potatoes, peeled

Heat a soup pot over medium heat. Add oil and stir in the next 3 ingredients. Cover and cook on medium low until they are tender about 5 minutes. Add the next 6 ingredients and simmer for 35 minutes. Add Spinach and cook 1 minute. Serve. |
