SWEET POTATO MINESTRONE

2 Teaspoons Olive Oil
1 Onion, diced
1 Celery Stalk, diced
1 Carrot, diced
2 Cups Water
14 Ounces Italian Canned
Tomatoes, diced
14 Ounces Chicken Broth

2 Sweet Potatoes, peeled
& diced
1 Cup Canned White Beans,
rinsed & drained
1/4 Teaspoon Black Pepper
2 Cups Packed Spinach Leaves,
torn

Heat a soup pot over medium heat. Add oil and stir in the next 3 ingredients. Cover and cook on medium low until they are tender about 5 minutes. Add the next 6 ingredients and simmer for 35 minutes. Add Spinach and cook 1 minute. Serve.
